California Salad
Inspired by California's beautiful and bountiful produce, I came up with this salad on a recent trip to the area. You can add a piece of grilled salmon or chicken to make it a complete meal, or leave it as a side dish.

1 small can 4.5 ozs of Mandarin Orange slices drain juice and set aside

½ cup walnut halves

1 cup peeled and cubed jicama

1 peeled and sliced avocado

Head of Romaine Lettuce
Tear Romaine Lettuce into bite size pieces and put into salad bowl. Add 1 small can of Mandarin Orange slices. Add walnuts, jicama, and avocado.
Dressing:

½ cup extra virgin olive oil

¼ brown rice (or other light) vinegar

Juice from drained Mandarin Orange slices

½ tsp honey
Put all ingredients in blender and blend until smooth
Use desired amount of dressing on salad.
