Tilapia with Mango Salsa
Tilapia is a mild white fish that is mostly farm raised these days, thus free of mercury. It cooks up quickly and is rich in protein.

4 to 6 tilapia fillets – rinse fish and pat dry with paper towel

Preheat oven to 350 and place squash on cookie sheet in oven

Heat 2 tablespoons of olive oil in pan and place tilapia into pan. Keep the heat low to medium low so that you are sautéing (slow cooking) as opposed to frying (which screws up the good oils). Sautee for 3 to 4 minutes per side. Remove from heat and drain on paper towels.
Mango Salsa:

Fresh mango, peeled and diced into small chunks

1/4 cup chopped fresh cilantro

1 chopped red bell pepper

1 finely chopped scallion

1 teaspoon olive oil

The juice of 1/2 lime
Mix all ingredients in bowl. Serve mango salsa as a condiment to the tilapia. Wonderful!
